Best Belgian Waffle Recipe in the World

Short History of the Recipe
My mom is the world's best cook. I know everyone says that, but mine really is. Each year on New Year's Day, she makes a roomful of waffles and we eat them with every imaginable topping. Whip cream, maple syrup, fruit syrup, butter, strawberries, blueberries, etc, etc. You get the picture. I am sure by now your mouth is watering.
My mom would always invite lots of people over for New Year's. Every single one of them would comment on these waffles. "They taste like donuts." or, "Can I get this recipe?" or, "Are those hard to make because they are delicious?"
Well, here is the truth, they do taste like some kind of delicious pastry. You can get the recipe. And, they are incredibly simple to make. Read on and I will tell you how.

How to make these delectable delights.
First, gather the following ingredients:
- 1 pkg dry yeast (2 1/4 tsp)
- 2 Cups lukewarm milk
- 4 eggs, separated
- 1 tsp vanilla
- 2 1/2 cups sifted flour (I actually never sift, I just use it right out of the bag--but don't tell my mom--she would be horrified.)
- 1/2 tsp salt
- 1 TB sugar
- 1/2 cup melted butter
Now, use a very large bowl. Not kidding here, these rise like crazy, use the biggest bowl you have. Sprinkle the yeast over the warm milk and stir. Beat the yolks only and add them to the yeast mixture. Add the vanilla to the mixture. In a separate bowl, mix the flour, salt and sugar. Add these to the liquid mix you have in the other bowl (the really big one). Stir in the melted butter. In a separate bowl (I use the empty dry ingredient bowl from the previous step) beat the egg whites until they are stiff. Fold these into the batter (if you don't know what this means--just take the stiff egg whites and use a spatula and softly, gently push them into the other mixture. Pretend that you are folding the mixture over and over about five times. Easy, huh?) Let this big bowl of mixture stand in a warm place until it doubles (normally about 45 minutes or more). Now, scoop the mixture into your favorite belgian waffle cooker and cook them up. Don't cry when you eat them. I know you will want to because they are so delicious they will bring tears of joy, but refrain. It will scare the kids if you cry. Enjoy with your favorite toppings.

Gypsy Willow, no joke, with these they never stick. You just give the pan a light spry of Pam and voila, perfect waffles. I have never once had them stick. In fact, for about five years I used my Grandma Nan's really old waffle iron that I inherited from her when she passed on. This waffle iron was about 35 years old and never once did my waffles stick. hey how many waffles does this make and will left over batter be ok in the fridge for a few days
This is an approximate based off of my memory--it makes about 8 or so waffles. And yes, you can keep it in the fridge--it won't go bad for two days or so but it is better fresh (after a while the batter sinks a little and isn't so light and fluffy). What we do is cook all the batter and then put the uneaten waffles in the fridge inside of a Ziploc bag. They last for about a week like this. You can then reheat them in a microwave or just toast them in the toaster like Eggos--this is my favorite way.

Hi, do u cover the bowl with plastic wrap when they rise? or just leave it uncovered to rise?

Hi, do u deflate the batter after it rises? before you cook the waffles? Sorry for all the questions, just want to feel prepared when I make them .
Samantha, I love questions. I don't cover the bowl, but it wouldn't hurt to cover it with saran. They don't rise a whole ton so as long as the bowl is plenty big you shouldn't have any mess get on the saran. I use all purpose flour. Cake flour might be delicious, just have never tried it. When the batter is risen, I actually don't deflate it, I just start scooping it into the waffle machine. It may deflate a little--but it is more liquid than a bread dough so not to worry about any deflation. Let me know how they turn out.

Do you have any other traditional Belgian recipes? My family also makes waffles for New Years Day, but they don't have yeast - also very delicious! I ask because I am a member of a Foundation that is trying to preserve Belgian heritage and history in the USA. Thanks for sharing.

you never wash a waffle iron just wipe it out well with paper towels or a clean towel and then your waffles never ever stick--the more you use the iron the better the waffles

Finn, One cup of AP Flour is approximately 125 grams, give or take lol.... I dont like standard measuring either, there too much room for error in alot of pastry type recipes that way. 1 Cup of milk is about 243 grams, and a 1/2 Cup of butter is one "stick" or 4 weighted ounces

These are really good waffles. and to the person who said thier waffles stick, my waffle maker warned NOT to use non-stick spray, just use a light coat of olive oil and mine have never stuck!

I've always loved Belgian waffles there one of the best meals to start the day off with. My mother also makes them but she just goes the easy way and uses bisquick. Great hub.

So, you do not stir or mix after you fold the stiff egg whites in? I just tried making the batter, and I'm just not sure all the lumpy stiff egg whites peering from under the batter are supposed to be there. :)

I made your moms waffles 2 weeks before Christmas to see if the recipe was as great as you boast. I wanted to make delicious waffles for Christmas breakfast for my children n grandchildren, a total of 13 people. I made 2 batches, I loved them and so did everyone else. I had 1 left over, I wad going to freeze it for later, but my son asked if he could take it home. I was asked for the recipe. Your recipe is easy and easy to follow. They were just as delicious as you said. your Momma is a great cook.

These were delicious but my batter didn't rise quite as much as it should have ... it made 5 1/2 waffles, but they were delicious!
