Black Bean Vegetable Chili

 Are you looking for a delicious recipe for veggie chili that is easy to make?  Here it is.  First, the list of ingredients:

  1. 1/4 Cup Olive Oil
  2. 2 Onions, cut into 1/4 inch dice
  3. 2 zucchini, cut into 1/4 inch dice
  4. 1 red bell pepper, cut into 1/4 inch dice
  5. 1 yellow bell pepper, cut into 1/4 inch dice
  6. 4 large garlic cloves, coarely chopped
  7. 8 ripe plum tomatoes, cut into 1 inch cubes
  8. 1 cup vegetable broth
  9. 1 cup chpped fresh parsley
  10. 1/2 cup slivered fresh basil leaves
  11. 3 TB chili powder
  12. 1 1/2 TB ground cumin
  13. 1 TB dried oregano
  14. 1 tsp black pepper
  15. 1/2 tsp dried red pepper flakes
  16. pinch of salt  (just add to taste)
  17. 2 cup cooked black beans
  18. 1 1/2 cup fresh or frozen thawed corn kernels (2-3 cobs)
  19. 1/2 cup chopped fresh dill or 1 TB dried
  20. 1/4 cup fresh lemon juice
  21. sour cream for garnish
  22. grated Monterey Jack Cheese, for garnish
  23. 3 green onions, thinly sliced, for garnish

That's it!  I know it sounds like a lot, but this recipe is well worth it.

Mix it up

Here are the easy steps to making this.  Do it in a large pot:

  1. Heat 1/4 cup oil
  2. Add onions, zucchini, peppers, garlic
  3. Saute over medium low heat for 10 minutes
  4. Add tomatoes, broth, 1/2 cup of parsley, basil, spices
  5. Cook over low heat for 30 minutes, stirring occasionally.
  6. Add black beans, corn, dill, and lemon juice
  7. Cook another 15 minutes.
  8. Adjust the seasonings (add more salt if necessary) 
  9. Stir in the remaining 1/2 cup parsley

Now you are done.  Serve this hot, garnished with sour cream, cheese, and green onion slices.  This chili is delicious hot and also can be made beforehand and reheated.  It actually gets better after a day or two.  Just reheat and serve.  This makes enough for 8 portions.

Great recipe. I've been meaning to try cooking chili, and I've been intimidated for some reason. I also thought you needed a Crock-Pot, but I guess not!
