- 1/4 Cup Olive Oil
- 2 Onions, cut into 1/4 inch dice
- 2 zucchini, cut into 1/4 inch dice
- 1 red bell pepper, cut into 1/4 inch dice
- 1 yellow bell pepper, cut into 1/4 inch dice
- 4 large garlic cloves, coarely chopped
- 8 ripe plum tomatoes, cut into 1 inch cubes
- 1 cup vegetable broth
- 1 cup chpped fresh parsley
- 1/2 cup slivered fresh basil leaves
- 3 TB chili powder
- 1 1/2 TB ground cumin
- 1 TB dried oregano
- 1 tsp black pepper
- 1/2 tsp dried red pepper flakes
- pinch of salt (just add to taste)
- 2 cup cooked black beans
- 1 1/2 cup fresh or frozen thawed corn kernels (2-3 cobs)
- 1/2 cup chopped fresh dill or 1 TB dried
- 1/4 cup fresh lemon juice
- sour cream for garnish
- grated Monterey Jack Cheese, for garnish
- 3 green onions, thinly sliced, for garnish

Here are the easy steps to making this. Do it in a large pot:
- Heat 1/4 cup oil
- Add onions, zucchini, peppers, garlic
- Saute over medium low heat for 10 minutes
- Add tomatoes, broth, 1/2 cup of parsley, basil, spices
- Cook over low heat for 30 minutes, stirring occasionally.
- Add black beans, corn, dill, and lemon juice
- Cook another 15 minutes.
- Adjust the seasonings (add more salt if necessary)
- Stir in the remaining 1/2 cup parsley
Now you are done. Serve this hot, garnished with sour cream, cheese, and green onion slices. This chili is delicious hot and also can be made beforehand and reheated. It actually gets better after a day or two. Just reheat and serve. This makes enough for 8 portions.

Great recipe. I've been meaning to try cooking chili, and I've been intimidated for some reason. I also thought you needed a Crock-Pot, but I guess not!

I was standing around the other day thinking...hmmm...it's time to make some vegetable chili especially with my guest here. But it's been so long and where can I find a recipe and which one...well, I always go with whatever is the best in the world.
